Continuous washers are industrial machines designed to automate the large-scale cleaning process of vegetables. Unlike manual or batch methods, these machines allow the product to enter dirty at one end and exit clean and sanitized at the other, without interruptions.
Main Types of Continuous Washers:
Depending on the delicacy of the product and the type of dirt (soil, insects, pesticides), different technologies are used:
- Immersion and Bubble Washers (Compressed Air):
These are the most common for leafy greens (lettuce, arugula, spinach). The equipment uses air injectors at the bottom of the tank to create turbulence in the water. The bubbling gently "agitates" the leaves, loosening insects and dirt without tearing the plant tissue.
- Hydrodynamic Washers:
These washers use directed water jets to create a helical flow (whirlpool) that transports the product along the tank. The movement of the water itself ensures that the vegetable is washed on all sides. Ideal for cut vegetables (cubes or slices) and vegetables that float.
- Rotary Drum Washers:
Widely used for root vegetables (potatoes, carrots, parsnips). The product passes through a rotating perforated cylinder. The friction between the vegetables and the drum walls, aided by high-pressure jets, removes encrusted dirt.
- Spray Conveyor Washers:
These consist of tunnels with conveyor belts where the product passes under a series of high-pressure nozzles. Suitable for products that have already been pre-washed or that have easily removable surface dirt.
- Brush Washers (Linear or Cylindrical):
Essential for processing fruits and vegetables with tough skin. The equipment uses a series of rotating brushes (with bristles ranging from soft to hard) that rotate the food 360° under jets of water. Used for removing waxes from fruits (apples, oranges), cleaning dirt from creases (cucumbers, carrots), and polishing bulbs.
For fruit, vegetable, and produce processing companies (known as fruit and vegetable industries or VMP - Minimally Processed), continuous washers are applied in various stages, from receiving the raw material to the final preparation for consumption.

- Immersion and Bubbling Washers:
Leafy Vegetables: Lettuce, arugula, spinach, and kale (whole or chopped);
Edible Flowers: Extremely delicate washing of flowers for haute cuisine;
Fresh Herbs: Basil, mint, and parsley for drying or freezing;
Fragile Fruits: Strawberries, blueberries, and grapes (where air replaces mechanical agitation).
- Whirlpool Washers (Hydrodynamic):
Cubed or Sliced Vegetables: Baby carrots, chayote cubes, French fries, or chopped onions;
Grains and Seeds: Sweet corn and peas (separation of husks by flotation);
Mushrooms: Quick wash of shimeji or Paris mushrooms to remove substrate without soaking the product.
- Rotary Drum Washers:
"Dirty" Roots: Freshly harvested potatoes, cassava, and parsnips (rough cleaning);
Bulbs: Onions and garlic for removing loose skins and soil;
Hard-Shelled Fruits: Watermelon and kabocha squash (to remove soil dirt).
- Brush Washers (Linear or Cylindrical):
Polishing: Carrots and radishes for the premium market (shiny appearance);
Wax/Fungus Removal: Apples, oranges, lemons, and mangoes;
Vegetables with Grooves: Cucumbers and zucchini, where the bristles reach irregularities in the skin. |
